Tender mango season in Kerala is short. There is a window of a few weeks, sometimes less, when the mangoes are still small and green and sour enough to pickle properly. Miss it and you wait another year. Neetha doesn't miss it. The moment the season arrives she is out collecting — from her own estate, from neighbours who know she is coming, from the market when she needs more. Everything gets cleaned, sorted, and goes straight into the pickling process while the mangoes are still at their best.

This is not a pickle you can buy any time of the year. It exists because of a season, made in the quantities that season allows, and packed without preservatives so what you get is exactly what Neetha made — nothing added, nothing extended, nothing altered. Pink salt, sesame oil, mustard seeds, fenugreek, and a spice blend she has spent years getting right. When the season ends, the pickle ends too. Until next year.

Storage

Once opened, store in a cool dry place. Always use a dry spoon. Consume within 4 months of opening.

The Kerala classic: a small piece alongside hot rice, coconut oil, and dal. Also works beautifully with curd rice, chapathi, or as a sharp, bright side to a rich fish curry. Use it sparingly, the sourness of tender mango is concentrated and a little goes a long way.
