Puliyinji is the one thing on a Kerala sadya plate that makes everything else make sense. That small, dark spoonful sitting quietly next to the avial and the olan, sour from tamarind, sharp from ginger, with just enough heat and sweetness to pull the whole meal together. It is not the loudest thing on the banana leaf. It is the most important.

Neetha makes hers the way sadya cooks have always made it tamarind slow-cooked down with fresh ginger, green chilly, and jaggery until the sourness softens and the sweetness deepens and the whole thing becomes something you can't quite describe but immediately recognise. Prepared in small batches from her kitchen in Ernakulam, with coconut oil, mustard seeds, and curry leaves tempered just right, this is the real thing — no shortcuts, no preservatives, just Puliyinji the way it was meant to taste.

Storage

Once opened, store in a cool dry place. Always use a dry spoon. Consume within 4 months of opening.
