Along the Kerala coast, preserving the catch has always been an art. Before refrigerators, before cold storage, fishermen and homemakers figured out that the sun and salt could do what no machine could — pull the moisture out of fresh fish and leave behind something that lasted, travelled, and tasted better with time. Meen Idichathu is that tradition in a jar.
Neetha makes it the way it has always been made. Fresh tuna, sun-dried and hand-shredded, then stir-fried slowly with roasted coconut, shallots, and Kerala spices until everything comes together into something deeply fragrant and completely addictive. Each batch is small, each jar is packed by hand, and nothing goes in that doesn't belong there.
