Lime pickle is common. Dates are sweet. Putting them together sounds like it shouldn't work and then you taste it and wonder why nobody told you about this sooner. The lime brings its familiar sharp bitterness, the dates pull it back with a deep, almost caramel sweetness, and somewhere in between, the garlic, ginger, and spices find a balance that makes the whole thing taste like it was always supposed to exist.
Neetha came to this combination the way good recipes usually arrive through curiosity and a willingness to try something that didn't have a rulebook. She uses pink salt instead of refined, sesame oil instead of vegetable, and Kashmiri chilly for colour and warmth without the aggressive heat. Each batch is made in small quantities from her kitchen in Ernakulam, prepared by hand, and packed without preservatives. It is one of those pickles that tastes better two weeks after you open it than the day you first try it — the flavours settle, the dates soften further, and the lime slowly stops fighting everything around it.

Once opened, store in a cool dry place. Always use a dry spoon. Consume within 4 months of opening.

Pairs beautifully with rice and dal, chapathi, or paratha. Try a small piece alongside biryani, the sweetness of the dates cuts through the richness in a way that works surprisingly well.
