Idiyirachi is one of those Kerala foods that exists quietly in the background of childhood memories. The kind of thing that appeared on the table without ceremony, shredded, slightly chewy, intensely flavoured and disappeared just as quickly. It was never the centrepiece. It was the thing that made everything else better.

Making it the traditional way takes time. The meat is cooked, pulled apart by hand, and then laid out to dry under the sun until the moisture is gone and what remains is concentrated, shelf-stable, and ready whenever you are. Neetha does it exactly this way buffalo meat, sun-dried and shredded, nothing added, nothing taken away. Just the meat in its most honest form, prepared in small batches and packed carefully so the texture holds and the flavour stays true.

Storage:

Store in a cool dry place. Refrigerate after opening. Always keep the pack sealed when not in use. Consume within 4 months of opening.

Eat it as is straight from the pack as a protein-rich snack.

Or cook it the Kerala way: heat 4 tsp coconut oil in a pan, add curry leaves, semi-crushed shallots, and garlic. Sauté till the onions turn transparent, add salt, then chilly powder, coriander powder, turmeric powder, garam masala, and pepper powder. Sauté for 5 minutes, add 1 cup of Idiyirachi, mix well, and cook for a few more minutes. Serve hot with rice or chapathi.
