Somewhere in a small home in Kerala, there's a tamarind tree that has been standing for longer than most of us have been alive.

Every season, when the pods turn a deep, ripe brown, the family that owns the tree gathers them by hand. They deseed the pulp on the veranda. They clean it. They press it into small, tight balls. They pack it a few kilograms at a time, never more than what the tree gives that season.

No factory. No preservatives. No middlemen. Just tamarind, sunshine, and patience.

Then it travels from that veranda in Kerala to your kitchen in Bangalore, a little slower than store-bought, a lot more real.

This is Tamarind by Edens — part of The Verandah at Malayali Kada.

Storage

Once opened, store in a cool dry place. Always use a dry spoon. Consume within 4 months of opening.

🍛 Kerala fish curry (meen curry)

The classic use. Soak a small piece in warm water for 10 minutes, extract the pulp, and add to your simmering curry. That deep, tangy base you can't get from any bottled paste.

🥘 Sambar

A staple in every South Indian sambar. Soak, extract, and add just before the vegetables finish cooking.

🌶️ Rasam

The heart of a good rasam. Use sparingly — the concentrated flavor goes a long way.

🥭 Puliyinji, pulissery, and other Kerala classics

Any traditional Kerala dish that calls for that signature sour-sweet balance.

🍚 Tamarind rice (puliyodarai)

Soak, extract a thick paste, and stir into hot rice with mustard seeds, curry leaves, peanuts, and dried chillies.

Boil a small piece in water, strain, add jaggery, ginger, and a pinch of salt. Chill and drink on hot days.
