Neetha decided to solve it. She took everything that makes fresh coconut chutney worth eating the sweetness of grated coconut, the bite of shallots, the warmth of chilly, the fragrance of curry leaves and worked out how to dry it into a powder that actually tastes like the real thing. No preservatives, no fillers, just the ingredients themselves reduced to something you can keep in your pantry and reach for whenever you need it. Made in small batches from her kitchen in Ernakulam, every jar is a little piece of a Kerala breakfast table that travels well.

Store in a cool dry place away from moisture. Always use a dry spoon. Consume within 4 months of opening for best flavour.
Mix into hot rice with ghee or coconut oil for the simplest, most satisfying meal. Also works as a side with idli, dosa, or upma. Sprinkle over rice. Once you have a jar, you'll find reasons to use it everywhere.
